Ground Beef With Eggplant and Jalapenos

What to do with when you have just a small harvest from the garden such as one pepper or an eggplant? I’ve found that this recipe is a great way to make use of a random eggplant harvest and of course the perfect way to utilize a jalapeño!

Ground Beef With Eggplant And Jalapeño

INGREDIENTS

1lb ground beef

2T olive oil

1 small eggplant

1/4 cup diced red onions

1 jalapeño

1 packet taco seasoning

DIRECTIONS

Finely dice eggplants, jalapeños and onion and heat over medium high heat with olive oil.

Once the veggies are tender (about 10 minutes), add in the ground beef and cook until browned.

Stir in taco seasoning. I just use a basic taco seasoning pack but you could totally use your own spices!

Serve in any way you would use taco meat! I added mine to a bowl with rice, refried beans, corn, cheese and garnished with more jalapeños.
