Summer Salsa

This non-traditional salsa is light, refreshing and can be made to be as mild or spicy as you like!

It’s a wonderful way to make use of those patty pan squash that you have been pulling in from the garden. I know that I got absolutely inundated by them last Summer and was looking for new ways to make use. This salsa was an absolute hit with my family.

Summer Salsa

INGREDIENTS

1 cup diced tomatoes

1 diced jalapeno

2 banana peppers

1 patty pan squash

1/2 red onion

1 lime

2 T parsley

DIRECTIONS

Dice all the veggies into small pieces and add to a bowl. Mix everything together and toss with the juice of the lime.

Serve with chips or any of your favorite Summer recipes!
